Camper's Rice Fry
|Bacon drippings/Butter||2 Tablespoon|
|Canned sliced mushrooms||4 Ounce (1 can)|
|Sliced green onions||1⁄2 Cup (8 tbs) (including tops)|
|Celery and leaves||1⁄4 Cup (4 tbs), sliced|
|Smoked sliced beef||4 Ounce, coarsely diced (1 package)|
|Chicken stock||1⁄2 Cup (8 tbs)|
|Soy sauce||1 Tablespoon|
|Brand rice||2 Cup (32 tbs)|
|Egg||1 , well beaten|
In a large skillet, heat bacon drippings or butter.
Drain mushrooms; reserve liquid.
Add onions, celery and leaves, mushrooms and beef.
Sauted 3 minutes.
Add enough chicken stock to mushroom liquid to make 1-2/3 cups.
Bring to a vigorous boil.
Add soy sauce and rice.
Simmer until all liquid is absorbed, about 5 minutes.
Add egg and stir until egg is cooked.
