Peachy Rice

  Vegetable cooking spray 1
  Margarine 1 Teaspoon
  Chopped celery 1⁄2 Cup (8 tbs)
  Chopped green onions 1⁄4 Cup (4 tbs)
  Cooked long grain rice 1 Cup (16 tbs) (Serve Hot)
  Hot cooked brown rice 1 Cup (16 tbs) (Cooked Without Salt Or Fat)
  Canned unsweetened peach slice 16 Ounce, drained and chopped (1 Can)
  Salt 1⁄4 Teaspoon
  Curry powder 1⁄4 Teaspoon
  Ground ginger 1⁄4 Teaspoon

Coat a large nonstick skillet with cooking spray; add margarine, and place over medium-high heat until hot.
Add chopped celery and chopped green onions,- saute until vegetables are tender.
Stir in long-grain rice, brown rice, chopped peaches, salt, curry powder, and ground ginger.
Cover and cook over low heat for 5 minutes or until thoroughly heated.
Transfer rice mixture to a serving dish, and garnish with fresh parsley sprigs,
