Vegetable Rice Medley
|Rice||1⁄2 Cup (8 tbs) (cooked)|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Vegetable oil||2 Teaspoon|
|Fresh tomato||1⁄2 Cup (8 tbs), chopped|
|Yellow red pepper/Sweet red pepper||1⁄4 Cup (4 tbs), chopped|
|Water||1⁄4 Cup (4 tbs)|
|Peas||1⁄2 Cup (8 tbs) (frozen)|
In a skillet over medium heat, saute the rice and onion in oil until rice is lightly browned.
Add tomato, pepper, water and salt; reduce heat.
Cover and simmer for 5 minutes.
Stir in peas and heat through.
