Vegetable Rice Medley

Ingredients
  Rice 1⁄2 Cup (8 tbs) (cooked)
  Onion 1⁄4 Cup (4 tbs), chopped
  Vegetable oil 2 Teaspoon
  Fresh tomato 1⁄2 Cup (8 tbs), chopped
  Yellow red pepper/Sweet red pepper 1⁄4 Cup (4 tbs), chopped
  Water 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Peas 1⁄2 Cup (8 tbs) (frozen)
Directions

In a skillet over medium heat, saute the rice and onion in oil until rice is lightly browned.
Add tomato, pepper, water and salt; reduce heat.
Cover and simmer for 5 minutes.
Stir in peas and heat through.
