Rice Balls And Mozzarella
|Cooked rice||2 Cup (32 tbs)|
|Grated parmesan cheese||1⁄2 Cup (8 tbs)|
|Chopped progresso roasted peppers||1⁄4 Cup (4 tbs)|
|Egg||1 , beaten|
|Ground black pepper||1⁄4 Teaspoon|
|Mozzarella cheese||2 Ounce|
|Progresso italian style bread crumbs||1⁄2 Cup (8 tbs)|
|Olive oil||2 Cup (32 tbs) (For Deep Frying)|
In a medium bowl combine rice, Parmesan cheese, roasted peppers, egg, salt and black pepper.
Shape into 2- to 3-inch balls.
Cut mozzarella cheese into 1/2-inch cubes.
Make a hole in the middle of each ball and fill with a cheese cube.
Reshape rice mixture to close hole.
Roll in bread crumbs.
Heat olive oil to 365° F.
Remove with a slotted spoon.
Drain on paper towels.
