Orange Spiced Rice
|Margarine||1 Tablespoon (Any Brand Of Choice)|
|Onion||1 Large, minced|
|Celery stalks||2 , minced|
|Uncooked brown rice||2 Cup (32 tbs)|
|Water||3 Cup (48 tbs)|
|Homemade chicken broth/Commercial low-sodium variety||2 Cup (32 tbs)|
|Golden raisins||2⁄3 Cup (10.67 tbs)|
|Orange peel||1 , chopped|
|Ground cloves||1⁄8 Teaspoon|
|Oranges||2 , peeled and cut into small segments|
In a large saucepan over medium-high heat, melt margarine.
Add onion and celery and saute 3 minutes.
Add rice and saute 2 additional minutes.
Add water, broth, raisins and orange peel.
Bring to a boil, then reduce heat.
Cover and simmer 30 to 40 minutes.
Stir in cloves and orange segments and garnish with mint.
