Orange Spiced Rice

Ingredients
  Margarine 1 Tablespoon (Any Brand Of Choice)
  Onion 1 Large, minced
  Celery stalks 2 , minced
  Uncooked brown rice 2 Cup (32 tbs)
  Water 3 Cup (48 tbs)
  Homemade chicken broth/Commercial low-sodium variety 2 Cup (32 tbs)
  Golden raisins 2⁄3 Cup (10.67 tbs)
  Orange peel 1 , chopped
  Ground cloves 1⁄8 Teaspoon
  Oranges 2 , peeled and cut into small segments
  Mint sprig 1
Directions

In a large saucepan over medium-high heat, melt margarine.
Add onion and celery and saute 3 minutes.
Add rice and saute 2 additional minutes.
Add water, broth, raisins and orange peel.
Bring to a boil, then reduce heat.
Cover and simmer 30 to 40 minutes.
Stir in cloves and orange segments and garnish with mint.
