Simple New Orleans Gumbo

Ingredients
1/4 cup bacon drippings
5 tablespoons flour
2 tablespoons butter
2 cloves garlic, minced
1 large onion, chopped
2 stalks celery, sliced
1 red bell pepper, sliced
1 quart chicken stock
1 can (28 ounces) tomatoes with juice, crushed
1 can (6 ounces) tom
Directions

Heat bacon drippings in a saucepan over medium heat.
Whisk in flour until it turns a deep rich brown; set aside.
In a stockpot or Dutch oven, melt butter and sauté garlic, onion, celery and pepper, stirring occasionally, until tender.
Stir in stock, tomat
