Charleston Red Rice
|Tomatoes||2 Can (20 oz) (Or 1 No. 2 Size Can)|
|Raw long grain rice||2 1⁄4 Cup (36 tbs)|
|Onion||1 Medium, chopped|
|Celery stalks||6 , diced|
|Green pepper||1 Small, chopped|
|Bacon slices/Leftover ham chunks||6|
|Tomato paste||1 Can (10 oz) (1 Can)|
Fry the bacon or ham in heavy saucepan.
Add tomato paste and all other ingredients and let cook until vegetables are tender.
Then put into a steamer and cover and let steam until dry.
Put in a double boiler, if you want, with the top on and let dry.
Takes about 45 minutes to get good and dry.
