Yellow Squash Rice
|Uncooked instant rice||1⁄2 Cup (8 tbs) (Such As Uncle Ben'S)|
|Chopped onion||1 Cup (16 tbs) (About 1 Medium)|
|Garlic||1 Clove (5 gm), minced|
|Chopped yellow squash||1 1⁄4 Cup (20 tbs) (About 1 Medium)|
|Dried oregano||1⁄2 Teaspoon|
|Finely chopped parsley||2 Tablespoon|
|Light butter||1 Tablespoon|
1. Cook rice according to package directions, omitting salt and fat.
2. Meanwhile, place a medium nonstick skillet coated with cooking spray over medium heat. Add onion and garlic; saute 3 minutes. Add squash and oregano; saute 3 minutes. Stir in rice, parsley, butter, and salt; toss well.
