Yellow Squash Rice

Ingredients
  Uncooked instant rice 1⁄2 Cup (8 tbs) (Such As Uncle Ben'S)
  Cooking spray 1
  Chopped onion 1 Cup (16 tbs) (About 1 Medium)
  Garlic 1 Clove (5 gm), minced
  Chopped yellow squash 1 1⁄4 Cup (20 tbs) (About 1 Medium)
  Dried oregano 1⁄2 Teaspoon
  Finely chopped parsley 2 Tablespoon
  Light butter 1 Tablespoon
  Salt 1⁄4 Teaspoon
Directions

1. Cook rice according to package directions, omitting salt and fat.
2. Meanwhile, place a medium nonstick skillet coated with cooking spray over medium heat. Add onion and garlic; saute 3 minutes. Add squash and oregano; saute 3 minutes. Stir in rice, parsley, butter, and salt; toss well.
