Fruited Brown Rice
|Water||2 Cup (32 tbs)|
|Brown rice||1 Cup (16 tbs)|
|Apple||1 Cup (16 tbs), chopped (raw, peeled)|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Almonds||1⁄2 Cup (8 tbs), slivered|
|Soft apricots||1⁄2 Cup (8 tbs), chopped (dried)|
Bring water to a boil.
Stir in brown rice, apple, onion and salt.
Bring to a boil.
Simmer until all water is absorbed, about 50 minutes.
Lightly brown almonds in butter or margarine.
Stir almond-butter mixture into hot cooked rice.
Stir in apricots and honey.
