|Basmati rice||3⁄4 Cup (12 tbs) (uncooked)|
|Light coconut milk||13 1⁄2 Ounce|
|Sweetened, flaked coconut||3 Tablespoon|
Combine rice, coconut milk, and salt in a saucepan.
Bring to a boil; cover, reduce heat, and simmer 15 minutes.
Remove from heat; let stand, covered, 10 minutes.
Add coconut; fluff with a fork.
