Onion Brown Rice With Carrots

  Water 2⁄3 Cup (10.67 tbs)
  Brown rice 1 Cup (16 tbs)
  Butter/Margarine 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Carrots 1⁄2 Pound, sliced
  Onion 1 Medium, sliced
  Cashews 1⁄2 Cup (8 tbs), chopped (salted)
  Orange-juice concentrate 1⁄3 Cup (5.33 tbs) (thawed)
  Green onions 4 , sliced

In a large saucepan, bring water to a boil.
Add rice, butter or margarine, salt, carrots and sliced onion.
Stir and cover tightly.
Cook over low heat until all liquid is absorbed, about 50 minutes.
Stir in cashews, orange-juice concentrate and green onions.
