Onion Brown Rice With Carrots
|Water||2⁄3 Cup (10.67 tbs)|
|Brown rice||1 Cup (16 tbs)|
|Carrots||1⁄2 Pound, sliced|
|Onion||1 Medium, sliced|
|Cashews||1⁄2 Cup (8 tbs), chopped (salted)|
|Orange-juice concentrate||1⁄3 Cup (5.33 tbs) (thawed)|
|Green onions||4 , sliced|
In a large saucepan, bring water to a boil.
Add rice, butter or margarine, salt, carrots and sliced onion.
Stir and cover tightly.
Cook over low heat until all liquid is absorbed, about 50 minutes.
Stir in cashews, orange-juice concentrate and green onions.
