Salad Appetizers

Ingredients
  Long grain and wild rice mix 6 Ounce (1 Package)
  Water 2 1⁄2 Cup (40 tbs)
  Butter/Margarine 1 Tablespoon
  Finely diced cooked chicken/Ham 1 Cup (16 tbs)
  Finely chopped celery 1⁄2 Cup (8 tbs)
  Chopped green onion 2 Tablespoon
  Chopped parsley 1 Tablespoon
  Mayonnaise/Mayonnaise type salad dressing 1⁄3 Cup (5.33 tbs)
  Lemon juice 1 Tablespoon
  Cherry tomatoes 4 Dozen
  Cucumber slices 4 Dozen
  Pimiento strips 1 Tablespoon (Thin, Adjust Quantity As Needed)
Directions

Cook contents of rice and seasoning packets with water and butter or margarine according to package directions.
Chill.
Combine rice, chicken or ham, celery, green onion, parsley, salad dressing or mayonnaise and lemon juice.
Mix well.
Chill.
To fill tomatoes, cut a thin slice from top of washed tomatoes; remove seeds with spoon and drain well.
Stuff tomatoes with salad mixture.
Slice cucumber about 3/8-inch thick and top each slice with a heaping teaspoonful of salad mixture.
Garnish with pimiento.
