Shrimp Fried Rice
|Chopped cooked shrimp||2 Cup (32 tbs)|
|Soy sauce||2 Tablespoon|
|Boiled rice||4 Cup (64 tbs)|
|Oil||1⁄4 Cup (4 tbs)|
|Eggs||2 , slightly beaten|
|Canned mushrooms||4 Ounce (1 Can)|
|Freshly ground black pepper||To Taste|
|Scallions||1⁄2 Cup (8 tbs), chopped|
Fry shrimp in oil in deep frying pan for 1 minute, stirring constantly.
Add eggs, mushrooms, salt and pepper; fry over medium heat for 5 minutes, stirring frequently.
Mix with chopped scallions.
Diced cooked chicken, pork or ham may be used instead of shrimp.
