Cheese Rice Ring

Ingredients
  Rice 1⁄2 Cup (8 tbs) (quick cooking)
  Water 1 Cup (16 tbs)
  Vegetable oil 1⁄2 Teaspoon
  Cheddar cheese 1 Cup (16 tbs), grated
  Milk 3⁄4 Cup (12 tbs)
  Eggs 2
  Salt 1 Teaspoon
  Dry mustard 1 Teaspoon
Directions

In 2 qt glass casserole combine rice, water and oil.
Microwave (high), covered, 4-5 minutes.
Rest, covered, 5 minutes.
Combine with cheese, milk, eggs, salt and mustard.
Pour into 6-cup baking ring.
Microwave (high), covered, 5-7 minutes, rotating 1/4 turn halfway through cooking.
Rest, covered, 5 minutes
