Brown Rice Loaf With Avocado Sauce
|Cooked brown rice||1 Cup (16 tbs)|
|Carrots||3 , finely grated|
|Eggs||3 , beaten|
|Scallions||3 , finely chopped|
|Cashews||1 Cup (16 tbs), finely chopped|
|Dried oregano/Mixed italian herbs||1⁄2 Teaspoon|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Shredded monterey jack cheese/Mild cheddar cheese||1⁄2 Cup (8 tbs)|
|Avocado sauce||1 Cup (16 tbs)|
1. In a large bowl mix the cooked rice, carrots, eggs, scallions, nuts, oregano, salt, pepper, and cheese.
2. Pack into an oiled 8 & 1/2- by 4 & 1/2-by 2 & 1/2-inch loaf pan. Cover with aluminum foil and bake in a 350-degree oven for 45 minutes. Remove the foil and cook for 10 minutes longer.
