Orange Rice Medley
|Onion||1⁄2 Cup (8 tbs), chopped|
|Green pepper||1⁄2 Cup (8 tbs), chopped|
|Sweet red pepper||1⁄2 Cup (8 tbs), chopped|
|Olive oil/Vegetable oil||2 Teaspoon|
|Long grain rice||1 Cup (16 tbs) (Uncooked)|
|Chicken broth||1 1⁄2 Cup (24 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Canned mandarin oranges||11 Ounce, drained and chopped (1 Can)|
In a saucepan over medium heat, saute onion and peppers in oil until tender.
Add rice; stir until lightly browned.
Add broth, orange juice, salt and pepper; bring to a boil.
Reduce heat; cover and simmer for 15-20 minutes or until liquid is absorbed.
Stir in oranges.
