Chicken Flavored Green Rice
|Minced green onion||1 Tablespoon|
|Spinach||10 Ounce, chopped (1 Bag)|
|Water||1 1⁄2 Cup (24 tbs)|
|Long grain rice||3⁄4 Cup (12 tbs)|
|Ground red pepper||1 Dash|
|Chicken bouillon cubes/Envelope||1|
1. In 3-quart saucepan over medium heat, in hot butter or margarine, cook green onion until tender, stirring occasionally. Stir in spinach; cook, stirring constantly, just until spinach wilts. Spoon spinach mixture into bowl; set aside.
2. In same saucepan over high heat, heat water, rice, ground red pepper, and bouillon to boiling. Reduce heat to low; stir ingredients to mix well. Cover and simmer 20 minutes or until rice is tender and all liquid is absorbed.
3. Stir spinach mixture into rice in saucepan; cook over low heat until heated through.
