Curried Garbanzo Beans & Rice

I always jokingly say that Curried Garbanzo Beans & Rice is my soul's food. I heard my husband quote the same about Curried Garbanzo Beans & Rice the other day. I will not be surprised if you say the same thing too.
  Olive oil 30 Milliliter (2 Tablespoon)
  Onion 1 Medium, chopped
  Green bell pepper 1 Medium, diced
  Canned garbanzo beans 30 Ounce (Drained, Rinsed)
  Garlic 4 Clove (20 gm), finely chopped
  Curry powder 2 Teaspoon
  Water 120 Milliliter (1/2 Cup)
  Canned plum tomatoes 14 Ounce, chopped (Reserving Liquid)
  Frozen chopped spinach 20 Ounce, thawed and squeezed (600 Gram Package)

In large saucepan, heat oil.
Add onion and green pepper; cook over medium heat, stirring occasionally, 3-5 minutes.
Add garbanzo beans, garlic, curry and water; bring to a simmer, cover and cook 5 minutes.
Stir in tomatoes and their liquid.
Add spinach and cover and cook 10 minutes.
Salt to taste.
