Curried Garbanzo Beans & Rice
|Olive oil||30 Milliliter (2 Tablespoon)|
|Onion||1 Medium, chopped|
|Green bell pepper||1 Medium, diced|
|Canned garbanzo beans||30 Ounce (Drained, Rinsed)|
|Garlic||4 Clove (20 gm), finely chopped|
|Curry powder||2 Teaspoon|
|Water||120 Milliliter (1/2 Cup)|
|Canned plum tomatoes||14 Ounce, chopped (Reserving Liquid)|
|Frozen chopped spinach||20 Ounce, thawed and squeezed (600 Gram Package)|
In large saucepan, heat oil.
Add onion and green pepper; cook over medium heat, stirring occasionally, 3-5 minutes.
Add garbanzo beans, garlic, curry and water; bring to a simmer, cover and cook 5 minutes.
Stir in tomatoes and their liquid.
Add spinach and cover and cook 10 minutes.
Salt to taste.
