Crisp Rice With Sesame Seeds
|Oil||6 Cup (96 tbs) (For Deep Frying)|
|Sesame seeds||2 Tablespoon|
Heat 6 cups oil in a wok over high heat to 375°F (190°C).
Test oil by dropping in a small piece of crisp rice.
The oil is hot enough if the rice puffs out in 3 seconds.
Reduce heat to medium.
Carefully lower a few rice squares at a time into hot oil with a slotted metal spoon.
Deep-fry until golden brown.
Remove with slotted spoon, drain on paper towels and place on a plate.
Heat a small saucepan over medium heat 30 seconds to 1 minute.
Add sesame seeds and stir-fry until golden brown.
Remove from heat and let cool.
Add sugar; mix well.
Pour sesame seed mixture over fried rice squares.
