Antipasto Rice

Antipasto Rice is a quick and yummy Italian rice dish. I am sure you will enjoy the variety of taste that this Antipasto Rice dish brings you. It has got everything to 'wow' you!
  Water 415 Milliliter (1 3/4 Cup)
  Tomato juice 120 Milliliter (1/2 Cup)
  Rice 240 Milliliter (1 Cup)
  Dried basil 1 Teaspoon (5 Milliliter)
  Dried oregano 1 Teaspoon (5 Milliliter)
  Salt 1⁄2 Teaspoon (3 Milliliter)
  Canned artichoke hearts 14 Ounce, drained and quartered (420 Gram, 1 Can)
  Roasted red peppers 7 Ounce, drained and quartered (210 Gram)
  Canned sliced ripe black olives 2 1⁄4 Ounce, drained (68 Gram, 1 Can)
  Snipped parsley 30 Milliliter (2 Tablespoon)
  Lemon juice 30 Milliliter (2 Tablespoon)
  Ground black pepper 1⁄2 Teaspoon (3 Milliliter)
  Grated parmesan cheese 30 Milliliter (2 Tablespoon)

Combine water, tomato juice, rice, basil, oregano and salt in a 3-quart saucepan.
Bring to a boil.
Reduce heat; cover and simmer 45 minutes or until liquid is absorbed.
Stir in artichokes, red peppers, olives, parsley, lemon juice and black pepper.
Cook 5 minutes longer.
Sprinkle with cheese.
