Orange Wild Rice
|Wild rice||3⁄4 Cup (12 tbs), rinsed well|
|Onion||1 Small, chopped|
|Orange||1 Medium, juiced|
|Chicken broth||1⁄2 Cup (8 tbs)|
|Finely grated orange peel||1 1⁄4 Cup (20 tbs) (1 Small Fruit)|
|Seasoned pepper||1⁄2 Teaspoon|
|Garlic powder||1⁄8 Teaspoon|
|Frozen peas||10 Ounce, thawed (1 Package)|
|Chopped pecans||1⁄3 Cup (5.33 tbs)|
|Mandarin orange sections||3 (For Garnish)|
In large saucepan, saute rice and onion in margarine, stirring frequently.
Add combined orange juice and broth, orange peel, Seasoned Pepper and Garlic Powder with Parsley.
Bring to a boil; reduce heat, cover and simmer 35 minutes or until liquid is almost absorbed.
Stir in peas and pecans; simmer 3 to 5 minutes longer.
Garnish with Mandarin orange sections.
