Confetti Rice Ring
|Cooked rice||4 1⁄2 Cup (72 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs) (1/2 Stick)|
|Snipped parsley||3⁄4 Cup (12 tbs)|
|Chopped pimiento||2 Ounce, drained (1 Jar)|
1. Prepare rice. While hot, stir in butter, parsley and pimiento.
2. Pack rice mixture into a buttered 5 1/2- to 6-cup microwave-oven-safe ring mold. Cover with plastic wrap. Heat thoroughly in microwave oven (5 to 6 minutes at Medium-High).
3. Remove from oven and remove plastic wrap; let stand 3 minutes. Unmold on a warm serving plate. Fill ring as desired.
