Fancy Rice

Ingredients
  Vegetable oil 1⁄3 Cup (5.33 tbs)
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Dry mustard 1 Tablespoon
  Paprika 1 Teaspoon
  Curry powder 1⁄2 Teaspoon
  Water 4 Cup (64 tbs) (Lightly Salted)
  Long grain rice 2 Cup (32 tbs)
  Butter 2 Tablespoon
  Almonds 1 Cup (16 tbs)
  Cashews 1 Cup (16 tbs)
  Celery 1 Cup (16 tbs), finely chopped
  Green onions 5 , chopped
  Avocados 2 , diced
  Garlic 1 Clove (5 gm), chopped
  Thyme 1⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
Directions

In a bowl, mix dressing ingredients.
In a saucepan, bring water to a boil.
Cook rice following package instructions.
Add dressing.
Marinate in refrigerator 12 hours.
In a frying pan, melt butter.
Lightly brown almonds and cashews 3 minutes or so.
Add vegetables, avocados and garlic.
Fold into rice.
