Rice With Good Vibes
|Corn oil||1⁄2 Cup (8 tbs)|
|Celery||1 Cup (16 tbs), diced|
|Green pepper||1 Cup (16 tbs), diced|
|Onion||1⁄2 Cup (8 tbs), grated|
|Green apple||1 Large, grated|
|Brown rice||2 Cup (32 tbs)|
|Vegetable stock||5 Cup (80 tbs)|
|Sea salt||2 Teaspoon|
|Currants||1⁄2 Cup (8 tbs) (or raisins)|
|Curry powder||2 Teaspoon|
Heat oil in saucepan and lightly saute celery, green pepper, onion, and apple.
Remove vegetables and reserve.
Add rice and lightly brown.
Drain oil from pan and add vegetable stock and sea salt.
Cover pan and cook rice for 45 minutes.
Stir in vegetables, currants, and curry powder.
Cover and cook an additional 15 to 20 minutes until rice is tender
