Laguna Beach Rice Bowl
|Green onions||1 Cup (16 tbs), chopped|
|Celery||1⁄2 Cup (8 tbs), sliced|
|Green pepper strips||1⁄2 Cup (8 tbs)|
|Margarine/Soy butter||2 Tablespoon|
|Cooked brown rice||2 Cup (32 tbs)|
|Tomatoes||2 , quartered|
|Cheddar cheese||1 Cup (16 tbs), grated|
|Parsley||7 Ounce, finely chopped (1 Small Bunch)|
|Garlic||1⁄4 Clove (1.25 gm), finely chopped|
|Ground black pepper||1⁄2 Teaspoon|
Saute green onions, celery and green pepper in margarine (or soy butter) for 3 minutes or until vegetables are barely tender.
Combine vegetables in a bowl with the hot brown rice, tomatoes, Cheddar cheese, parsley, garlic, salt and pepper.
Mix well, allowing time for cheese to melt a little
