Brown Rice Sour Cream Casserole
|Sour cream||1 1⁄2 Cup (24 tbs)|
|Green chili peppers||2 Tablespoon, seeded and diced|
|Cooked brown rice||3 Cup (48 tbs)|
|Jack cheese||1⁄2 Pound, cut into strips|
|Cheddar cheese||1⁄2 Cup (8 tbs), grated|
Mix sour cream with green chilies.
Put a layer of brown rice in the bottom of a small greased casserole.
Spoon 3/4 of a cup of sour cream mixture over rice.
Lay 1 /2 of the Jack cheese strips over the top.
Make another layer of rice, sour cream, and cheese strips, ending with a final layer of rice on top.
Sprinkle top with Cheddar cheese.
Cover and bake for 20 minutes until cheese melts.
Optional: Layer small pieces of cooked, boneless chicken between the sour cream mixture and Jack cheese.
