Fish Fried Rice

Fish Fried Rice - This irresistibly seasoned rice garnished with chunks of crispy fish is a thoroughly mouthwatering fare ! Just try this Fish Fried Rice and let me know if you share my passion !
Ingredients
  Fish 1⁄2 Kilogram, cleaned and cut in small pieces
  Long rice 2 Cup (32 tbs)
  Onions 2 Large, chopped
  Desiccated coconut 2 Tablespoon
  Ground coriander 1 Tablespoon
  Turmeric powder 1 1⁄2 Tablespoon
  Ginger 1
  Ground cumin 2 Teaspoon
  Fenugreek seeds 1⁄2 Teaspoon
  Bay leaf 1
  Lime juice 1⁄2
  Oil 1⁄2 Cup (8 tbs)
  Salt To Taste
Directions

Soak the cleaned rice in cold water for at least 1 hour.
Clean and cut the fish into 2" pieces.
Fry the mixture of coriander, cumin, turmeric, fenugreek and ginger in 2 tbsp of oil for about a minute.
Now add the fish pieces to the mixture and stir gently.
Cover the pan and allow the fish to cook for five minutes or till they get softened.
Then remove from fire and keep aside.
In another pan take the remaining oil and fry the onions with the bay leaf till they turn brown.
Now drain the rice and add to the friend onions and cook further with coconut and lemon juice for a couple of minutes.
Boil the fried fish mixture with a cup of water and pour this water into the rice mixture.
Add more warm water to simmer and cook the rice.
Place the rice on a serving plate and arrange the cooked fish pieces on top.
Garnish with chopped coriander leaves.
