|Onion||1⁄2 Cup (8 tbs), chopped|
|Canned black eyed peas||15 Ounce, washed and drained (1 Can)|
|Instant rice||1 Cup (16 tbs)|
|Hot red pepper||1 Small, crushed|
|Hot water||3 Cup (48 tbs)|
In 3-quart casserole, place sausage and onion.
Microwave at HIGH (10) 8 to 10 minutes, until sausage is thoroughly cooked; stir after 4 minutes to break sausage apart.
Add black-eyed peas, rice, red pepper, water, salt and pepper.
Microwave at HIGH (10) 10 to 15 minutes until rice is cooked and most of the liquid is absorbed; stir after 5 minutes.
Let stand 5 minutes before serving.
