Pork Chop And Rice Casserole With Oregano
|For tomato sauce|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Ripe tomatoes||3 Medium, sliced|
|Onions||2 Medium, chopped|
|Garlic||2 Clove (10 gm), minced|
|White pepper||1⁄4 Teaspoon|
|Dried oregano leaves||1⁄4 Teaspoon|
Heat oil in frypan; saute tomatoes, onions, and garlic about 5 minutes, stirring constantly.
Season with salt, pepper, and oregano.
Cover; simmer tomatoes in their own juices about 20 minutes.
Strain through sieve; return puree to frypan.
Cook until liquid is reduced to two-thirds; stir frequently.
