Ingredients
For tomato sauce
  Vegetable oil 1⁄4 Cup (4 tbs)
  Ripe tomatoes 3 Medium, sliced
  Onions 2 Medium, chopped
  Garlic 2 Clove (10 gm), minced
  Salt 1⁄2 Teaspoon
  White pepper 1⁄4 Teaspoon
  Dried oregano leaves 1⁄4 Teaspoon
Directions

Heat oil in frypan; saute tomatoes, onions, and garlic about 5 minutes, stirring constantly.
Season with salt, pepper, and oregano.
Cover; simmer tomatoes in their own juices about 20 minutes.
Strain through sieve; return puree to frypan.
Cook until liquid is reduced to two-thirds; stir frequently.
Set aside.

Since this is called porck chop and rice casserole I can't help wondering why there is no rice mentioned in the recipe...
