The cooker has a top cover, vent, middle section for cooking and the bottom section for charcoal known as the charcoal bowl. This cooker is good because it allows you to control temperature. This is done through three vents given in the bottom. More air more temperature and likewise less air, less temperature .
You can use lump charcoal. some people use charcoal briguettes as it is cheap, easy to find and provides constant temperature.I like to use lump charcoal because it makes food taste better and produces less ash. The lump charcoal makes compost.
This smoker is also called water smoker because of the water pan below bottom grate. It is filled with water and acts as heat sink and heat deflector.
To add a smoky flavor, I use pecan wood and oak wood chunks. Wrap them in a foil and make holes so that the flavor reaches food.
You can use a meat thermometer. To adjust the temperature adjust the vents.
