Barbecued Spareribs

Ingredients
  Spring onions 6
  Garlic 2 Clove (10 gm)
  Sugar 2 Tablespoon
  Fish sauce 4 Tablespoon
  Freshly ground black pepper To Taste
  Pork spareribs 1 Kilogram
  Boiled rice 2 Cup (32 tbs)
  Cucumber 1⁄2
  Nuoc cham sauce 1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)
Directions

Finely chop the spring onions, including some of the green tops, and garlic with the sugar. Add the fish sauce and black pepper and mix well. Put the spareribs into a flat dish and spoon over the mixture, turning to coat thoroughly. Cover with plastic wrap, leave to marinate at least 2 hours. Place on a rack in a roasting pan, spoon over the seasoning mixture and roast in a hot oven 200C (400F) for 35-40 minutes. Cut the ribs into strips. Put the rice in a serving dish, top with spareribs, decorate with sliced cucumber and sprinkle over a little of the Nuoc Cham Sauce. Accompany with the remaining sauce in a bowl. Serves 4.
