Black Cherry Bourbon Spare Ribs

Delicious spare ribs with bourbon!

Ingredients

Spare rib 1 1/2 Pound , washed, trimmed
For brine
Oranges 3 , juiced
Lemon 2 , juiced
Lime 2 , juiced
Water 1/4 Cup (4 tbs)
Kosher salt 2 Tablespoon
Dried thyme 1 Teaspoon
Red pepper flakes 1 Tablespoon
For bourbon glaze
Butter 2 Tablespoon
Brown sugar 1/2 Cup (8 tbs)
Crushed red pepper flakes 1 Pinch
Salt 2 Teaspoon
Coarse black pepper 1 Teaspoon
Red cherry bourbon 1 1/4 Cup (20 tbs) , divided
For spraying
Apple juice 1/4 Cup (4 tbs)
Cider vinegar 1/4 Cup (4 tbs)

Directions

GETTING READY

1. In a mixing bowl, squeeze out the juice of orange, lemon and lime. Add water, thyme, red pepper flakes and kosher salt, mix together.

2. In a zip lock bag, roll and place the spare rib, pour in the juice mixture and allow to brine for 3 to 6 hours.

3. Preheat an outdoor grill to about 250F to 275F.

MAKING

4. In a saucepan, melt butter, add brown sugar, salt, black pepper and red pepper flakes, pour in the bourbon (1 cup) and mix.

5. On the heated grill, place the rib and allow to grill for about 3 hours. Spray with apple juice and cider vinegar first after 1 hour and then at intervals of 30 minutes.

6. Place the rib on a foil sheet, pour in the remaining bourbon, wrap and grill for another 1 hour.

7. Unwrap and place the rib directly on the grill, brush with the prepared glaze and allow to grill for 1 hour, brush with the glaze after every 20 minutes.

SERVING

8. Cut into slices and serve with your choice of beverage.
