One Rib For Two
|Salad oil/Olive oil||1 Tablespoon|
|Garlic clove||1 Small, minced / pressed|
|Standing rib roast||2 1⁄2 Pound, frozen solid (1 Whole)|
|Russet potatoes||2 Large|
Combine oil and garlic; rub evenly over cut surfaces of frozen meat.
Stand rib, bone side down, in a shallow baking pan between potatoes placed like book ends.
Roast, uncovered, in a 400° oven for 1 hour.
Insert a meat thermometer through fat layer into center of roast without touching bone; continue to cook until meat thermometer registers degree of doneness preferred
Let stand for 5 minutes before carving
