|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Butter/Margarine||1 Cup (16 tbs), softened|
|Granulated sugar||3⁄4 Cup (12 tbs)|
|Raspberry jam||3⁄4 Cup (12 tbs)|
|Desiccated coconut||3⁄4 Cup (12 tbs)|
|Chopped walnuts||1⁄4 Cup (4 tbs)|
Combine flour and baking powder.
In mixing bowl, cream together butter, sugar and egg.
Gradually stir in flour mixture until blended.
Mix lightly with hands to form smooth dough.
Refrigerate for 30 minutes.
Place dough between 2 sheets of waxed paper and roll into 13 x 10 inch (32 x 25 cm) rectangle.
Combine jam, coconut and nuts.
Spread evenly over dough.
Starting from long side, roll up tightly.
Wrap in waxed paper and chill until firm, about 5 hours or overnight.
Cut dough into 1/4 inch (5 mm) slices and place on greased baking sheets.
Bake in 375Â°F (190Â°C) oven for 12 to 15 minutes or until lightly browned.
