Raspberry Palmiers

Ingredients
  Puff pastry 1 Pound
  Milk/Beaten egg 1⁄2 Cup (8 tbs) (For Coating)
  Heavy cream 1 Cup (16 tbs), chilled
  Granulated sugar 1⁄2 Cup (8 tbs)
  Vanilla extract 1 Teaspoon
  Fresh raspberries 2 Cup (32 tbs)
  Confectioners sugar 1 Tablespoon (For Garnish)
Directions

GETTING READY
1. Preheat the oven to 400°F
2. Rinse and hull the raspberries

MAKING
3. With the puff pastry, make twenty four palmiers, brush them with milk or beaten egg; bake them for fifteen minutes or less
4. In a bowl, pour the cream and add quarter cup of sugar and vanilla, whipping till it begins to hold shape
5. Fill the cream into a large piping bag fitted with a star nozzle and pipe large swirls into one side of twelve of the cold palmiers
6. Arrange the raspberries on top of the cream, and top with the other palmier, pressing lightly

SERVING
7. Sift confectioner's sugar on top and serve
