|Stewed sweetened raspberries/1 tin raspberries||1 Pound|
|Evaporated milk||14 Ounce (1 Large Tin)|
Melt one jelly with a little of the raspberry juice, and make up to 1 pint with water.
Put raspberries into a deep bowl or bowls and pour the jelly over them.
Put aside to set.
Melt the second jelly in not more than 1/4 pint of raspberry juice.
Whisk the evaporated milk until it is four or five times its volume.
Carefully drip in the melted jelly as you whip the milk.
Pour over the set jelly and raspberries and chill well before serving.
These quantities make a generous amount, and you may find it useful to divide the dish between two bowls.
Other fruits make equally attractive Flummery.
Pineapple is particularly refreshing.
