Rice Raisin Stuffing
|Curry seasoned rice||6 Ounce, cooked following package directions and using only|
|Water||2 1⁄4 Cup (36 tbs)|
|Ground lamb||1 Pound, browned and drained|
|Diced green pepper||1⁄2 Cup (8 tbs)|
|Golden raisins||1⁄3 Cup (5.33 tbs)|
|Chicken broth||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Seasoned salt||1⁄2 Teaspoon|
Lightly mix all ingredients.
Use one half as stuffing for lamb crown roast and remaining half for an accompanying casserole.blending in bouillon last.
Spoon into pocket of breast.
Place meat, rib side down, on rack in shallow roasting pan.
Roast, uncovered, at 300Â°F about 2 hours, or until meat is tender.
