Old Time Raisin Drops
|Apricot juice/Orange juice/water||3⁄4 Cup (12 tbs)|
|Raisins||1 Cup (16 tbs)|
|Quick cooking rolled oats||1 Cup (16 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Molasses||1⁄4 Cup (4 tbs)|
|Grated orange peel||1 Tablespoon|
|Baking powder||1 Teaspoon|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
In mixing bowl, combine juice and raisins.
Microwave at High 2 to 5 minutes, or until mixture comes to full boil.
Cool 10 minutes.
Mix in remaining ingredients except flour.
Blend in flour.
Drop 5 to 8 rounded measuring teaspoonfuls in large ring on wax paper on microwave-proof baking sheet, large dinner plate, pie plate or paper plate.
Drop 1 or 2 in center.
Microwave at 50% (Medium) 1 1/2 to 4 1/2 minutes, or just until dry on surface, rotating 1/4 turn every 45 seconds.
Remove cookies as they appear done.
Remove wax paper with cookies on it to countertop; cool.
