Easy Raisin Star Cookies
|Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon, freshly squeezed|
|Lemon peel||1 Teaspoon, grated|
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 Teaspoon|
Cream shortening and sugar.
Add eggs one at a time, beating well after each addition.
Blend In lemon juice and peel.
Mix in combined dry ingredients.
Roll dough 1/8-inch thick.
Cut into 3-inch circles.
Put filling on center of each circle; pinch edges in 5 places to make points; fold dough over filling between points.
Place on greased cookie sheets and bake at 375° for 12 minutes.
