Fried Hare Or Rabbit

Ingredients
  Hare/Rabbit 1
  Egg 1 , beaten
  Bread crumbs 1⁄2 Cup (8 tbs) (adjust quantity as needed)
  Milk/Cream 1 Cup (16 tbs)
  Flour 2 Tablespoon
Directions

GETTING READY
1.Start by cleaning the hare or rabbit as directed
MAKING
2.In a pot, simmer the meat for 15 minutes and then drain it
3.Once the meat turns cold, cut it into serving pieces
4.Then dip the pieces into beaten egg, then into bread crumbs, and season with salt and pepper
5.In a pan, sauté dipped meat in hot fat until brown on all sides
6.Remove to warm platter
7.Brown flour in fat and add milk or cream
8.Bring to boiling and pour over rabbit
9.Garnish with sliced lemon and parsley
SERVING
10.Serve with a sauce of your choice and with vegetables
