Roast Hare Or Rabbit

Ingredients
  Hare/Rabbit 1
  Sausage stuffing 1 Cup (16 tbs) (adjust quantity as needed)
  Poultry fat/Oil 1 Tablespoon (adjust quantity as needed)
  Currant jelly 2 Tablespoon (adjust quantity as needed)
Directions

GETTING READY
1.Start by preheating the oven to 325F degrees
2.Also wash the dressed hare or rabbit under running water and dry
MAKING
3.Now season hare or rabbit with salt and pepper, stuff and sew up
4.Roast uncovered in moderate oven for 1 1/2 to 3/4 hours or until tender
5.Baste with fat
6.A thin piece of cheese cloth dipped in oil may be placed over the back for the first 45 minutes
7.Garnish with parsley or watercress
SERVING
8.Serve with rice, bread, glazed carrots or salads
