Fried Rabbit (Coniglio Fritto)
|Lemon juice||2 Tablespoon|
|Olive oil||3 Tablespoon|
Cut the rabbit into pieces and soak in cold salted water for two hours.
Drain and dry thoroughly.
Mix lemon juice with salt and pepper and rub onto each rabbit piece.
Chop bacon and fry in the oil until crisp.
Remove the bacon.
Put rabbit pieces in the frypan and cook until tender.
Just before the end of the cooking, return the bacon pieces.
