Rabbit Carbonnade

Ingredients
  Rabbit 4 Pound (2, 2 Pound Each)
  Flour 3 Tablespoon
  Carrots 2
  Onion 1
  Bacon slices 1⁄4 Pound
  Butter 1⁄4 Cup (4 tbs)
  Bouquet garni 1
  Garlic 1 Clove (5 gm)
  Beer 2 1⁄2 Cup (40 tbs)
Directions

GETTING READY
1) Preheat the over to 350°.
2) Cut the rabbit into neat pieces.
3) Peel and thinly, slice the carrots.
4) Peel and chop the onion.
5) Cut the bacon into strips.
6) Peel and crush garlic.

MAKING
7) Toss the rabbit pieces in the flour till lightly coated.
8) In a flameproof casserole, melt the butter and fry the carrots, onion and bacon for 5 minutes.
9) Add the rabbit pieces and fry till browned.
10) Add the bouquet garni, and garlic.
11) Pour the beer over, cover tightly and cook in the oven for 1 3/4 - 2 hours till the rabbit is tender.

SERVING
12) Serve the Rabbit carbonnade with boiled potatoes.
