|Rabbit||4 Pound, cut into serving pieces and fat removed|
|Leek||1 , thinly sliced|
|Sweet red pepper||1⁄2 , diced|
|Green pepper||1⁄2 , diced|
|Sliced mushrooms||2 Cup (32 tbs)|
|Tomatoes||3 Large, peeled, seeded and chopped|
|Rosemary||1⁄4 Teaspoon, crumbled|
|Chicken stock||1 Cup (16 tbs)|
|Hot cooked rice||2 Cup (32 tbs)|
Place the rabbit in a deep ovenproof casserole.
Cover with the leeks, red peppers, green peppers, mushrooms, tomatoes, basil, and rosemary and pour the chicken stock over all.
Cover the casserole and bake at 300° for 2 hours.
