Bacon And Onion Quiche
|Shortcrust pastry||4 Ounce|
|Onion||1 Small, chopped|
|Bacon||1⁄4 Pound, rinded|
|Thin cream||1⁄4 Pint|
|Tomatoes||2 , sliced|
Use the pastry to line a 7 inch fluted flan ring placed on a baking tray.
Chill in the refrigerator for 10 minutes then bake blind at 425Â°F, Gas Mark 7 for 15 minutes.
Remove from the oven and discard the paper and baking beans, or foil.
Fry the onion in the butter until soft but not coloured.
Chop the bacon and add to the pan.
Fry the onion and bacon until golden brown.
Blend together the egg, cream and seasoning.
Put the onion and bacon in the flan case.
Strain the egg mixture on top.
Arrange the tomatoes round the top of the quiche.
Cook at 350Â°F, Gas Mark 4 for 35 minutes or until the filling is set.
