Bacon And Mushroom Quiche
|9 inch microwaved pie shell||1|
|Shredded swiss cheese||1 1⁄2 Cup (24 tbs)|
|Mushroom stems and pieces||4 Ounce, drained|
|Half and half/Evaporated milk||1 1⁄4 Cup (20 tbs)|
|Eggs||3 , beaten|
|Chopped chives||1 Tablespoon|
Prepare and microwave pie shell.
Layer 1/3 of the bacon between paper towels in baking dish.
Repeat 2 times.
Microwave until crisp, 7 to 9 minutes; cool slightly.
Crumble bacon into pie shell.
Top with cheese and mushrooms.
Microwave half and half in 4 cup glass measure until hot, 2 to 2 1/2 minutes.
Beat in salt, pepper and eggs; pour over cheese in pie shell.
Sprinkle with chives.
Microwave uncovered 4 minutes; turn pie plate onequarter turn.
Microwave until center is just about set, 4 1/2 to 5 1/2 minutes.
Let stand a few minutes before cutting.
