|Heavy cream||1 Cup (16 tbs)|
|Grated swiss cheese||1⁄2 Cup (8 tbs), grated|
|Baked pie shell||1 , baked|
Melt 3 tablespoons butterr; add shallots, mushrooms, 1 teaspoon salt and lemon juice.
Simmer, covered, for 10 minutes or until liquid evaporates and mush- rooms are tender.
Beat eggs with cream; add remain- ing salt, pepper and nutmeg.
Stir in mushroom mix- ture; pour into pie shell.
Sprinkle with cheese; dot with remaining butter.
Bake at 350 degrees for 35 minutes or until knife inserted in center comes out clean.
