Whimsical Mini Quiche Lorraine the Kids Will Love
|Onion||1 Small, chopped|
|Skim milk||1⁄2 Cup (8 tbs)|
|Freshly ground black pepper||1⁄4 Teaspoon|
|Freshly chopped parsley||1 Tablespoon|
|Shredded swiss cheese||1⁄2 Cup (8 tbs)|
|Bacon slices||4 , cooked crispy and chopped|
Preheat an oven to 375 degrees F and position a rack in the center of the oven. Coat two 12-cup muffin tins with nonstick cooking spray.
In a skillet over medium heat, melt the butter until foam subsides. Add the onion and cook 7 minutes, or until tender and golden.
In a medium bowl, whisk together the eggs, milk, salt, pepper and parsley. Set aside.
Add a pinch of cheese, onions and bacon to the bottom of each muffin cup.
Fill each muffin tin until the batter just reaches the top of each muffin cup.
Bake for 15 minutes, or until the muffin tops are puffed and golden.
