Whimsical Mini Quiche Lorraine The Kids Will Love

This recipe is from HolidaysCentral's 2012 Oscar's Best Picture Inspired Menu, where you can get the full menu and other fun holiday ideas. Best Picture Nominee, Hugo, is about an adventurous boy and is set in Paris. Bring out the adventurous side in your kids by serving the ingredients they love in the traditional Parisian style. Mini quiches are fun and whimsical, just like Hugo, and not to mention delicious! The kids will love them just as much as they loved the movie!
Ingredients
  Butter 1⁄2 Tablespoon
  Onion 1 Small, chopped
  Eggs 8
  Skim milk 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Freshly ground black pepper 1⁄4 Teaspoon
  Freshly chopped parsley 1 Tablespoon
  Shredded swiss cheese 1⁄2 Cup (8 tbs)
  Bacon slices 4 , cooked crispy and chopped
Directions

Preheat an oven to 375 degrees F and position a rack in the center of the oven. Coat two 12-cup muffin tins with nonstick cooking spray.

In a skillet over medium heat, melt the butter until foam subsides. Add the onion and cook 7 minutes, or until tender and golden.

In a medium bowl, whisk together the eggs, milk, salt, pepper and parsley. Set aside.

Add a pinch of cheese, onions and bacon to the bottom of each muffin cup.

Fill each muffin tin until the batter just reaches the top of each muffin cup.

Bake for 15 minutes, or until the muffin tops are puffed and golden.
