Salmon Quiche

Ingredients
  Cottage cheese 1⁄2 Cup (8 tbs)
  Ricotta cheese 1⁄2 Cup (8 tbs)
  Buttermilk 1⁄4 Cup (4 tbs)
  Scallions 2 , finely chopped
  Eggs 2
  Red salmon 15 1⁄2 Ounce, drained (With Bones)
  Nutmeg 1 Pinch, freshly grated
  9 inch whole wheat pastry crust 1 (Unbaked)
Directions

MAKING
1. In a blender, process together the cheeses and buttermilk at low speed till well blended; turn out in a large bowl and mix with scallions and eggs
2. Flake the salmon meat, crush the bones and add to the cheese mixture along with a pinch of nutmeg
3. Add the salmon mixture into the pie crust and place in an oven preheated to 400°F; bake for twenty minutes, turn the temperature down to 350°F and bake another fifteen minutes until golden brown

SERVING
4. Can be served both hot or at room temperature
