Smoked Salmon And Potato Quiche

Ingredients
  Shortcrust pastry 8 Ounce (225 Gram)
  Egg 1 , beaten
  Smoked salmon 6 Ounce, chopped (175 Gram)
  Smoked bacon 4 Ounce, cooked (100 Gram)
  Baby new potatoes 4 Ounce, cooked (100 Gram)
  Eggs 3
  Chopped dill 1 Tablespoon
  Creme fraiche 7 Fluid Ounce (200 Milliliter)
  Nutmeg 1 Tablespoon, freshly grated
Directions

GETTING READY
1. Preheat oven to 180C/fan 160C/gas 4

MAKING
2. Roll the pastry out and use it to line a deep, 25cm flan tin; prick the base with fork and line with parchment paper and baking beans
3. Bake blind for twenty minutes or more; remove the paper and beans
4. Brush the pastry with egg and cook for another five minutes; spoon salmon, bacon and potatoes over the pastry
5. In a bowl, beat dill, eggs, creme fraiche together, add seasoning and pour it over; bake for another forty minutes or less and let it cool when done

SERVING
6. Serve with green salad leaves
